The Sweet Potato Process

Sweet potatoes are harvested during the fall.

Harvest begins by digging up the sweet potato roots to bring the potatoes to the soil surface.

Potatoes are then picked by hand.

Once picked, potatoes are put into ventilated bins.

Sweet potatoes are then cured in a warm and humid environment (approx. 85°F with a 90% relative humidity) for 5-7 days.

After harvesting, sweet potatoes are cured. The curing process enhances the flavor of the potato by increasing the sugar and moisture content. In addition, curing promotes storage durability by promoting wound healing (which can be caused during harvest) and toughening of the potato skin. After curing, the potatoes are held at 55° F for long-term storage.

Sweet potatoes are then packed and shipped during the winter months.
