Sweet Potato Process

After the Fall harvest, the sweet potatoes go through a curing process that enhances the flavor of the potato by increasing the sugar and moisture content. Curing also strengthens storage durability by promoting wound healing (which can be caused during harvest) and toughening the skin of the potato. After curing, the potatoes are held at 55° F for long-term storage. Sweet potatoes are then packed and shipped during the winter months.

Harvest begins by digging up the sweet potato roots to bring the potatoes to the soil surface.
Once picked, potatoes are put into ventilated bins.
Potatoes are then picked by hand.
Sweet potatoes are then cured in a warm and humid environment (approx. 85°F with a 90% relative humidity) for 5-7 days.
